The morning starts with a cup or two of coffee, followed by a quick gathering with the team. We take a look back at the previous day, talk about special requests, share some jokes and get our energy flowing. Preparing ingredients is a team effort. Freshness rules here. Avocados are sliced just as they reach their peak of ripeness.

By mid-morning, we’re deep into cooking mode. The heat of the barbecue radiates out into the kitchen, as the flames are lit by the marinated meat. The sizzle is like a musical note to our ears. The smoky perfection of the caramelized juices is almost hypnotic.

It’s certainly not all glamour. You’ll need to put in some elbow grease. For example, managing the inventory and cleaning up spills is a team effort. One minute you’re flipping the tortillas and next, you rush to replenish limes. Someone misjudged how much people loved their zesty zest.

Lunchtime is often unexpected and catches us off guard. Tacos assemble with care – each one a small masterpiece packed full of flavor bombs such spicy salsa or cream guacamole. Customers are eager to try their first taco.

Engagement with guests is my favorite part of my job. “What’s in your secret ingredients?” The question is asked with great interest. It’s always made with love and magic (and a chuckle). It’s amazing to see their eyes light up as they bite into the food. Priceless.
